I hope you had a FANTASTIC Thanksgiving! We got to spend a ton of time with family, celebrate our oldest son’s 8th birthday, balance our budget AND knock out a few house projects. ( Wow, yeah….. so it was productive!)

Our Thanksgiving Break
Our Thanksgiving break started off with a birthday! Our son, Cole turned 8 and this year it fell on Turkey day!
In our home, we always do a very special birthday breakfast. The kiddo gets to pick donuts or ice cream sundaes. We make sure the birthday boy or girl has a special place setting with a balloon, gifts, and cards waiting for them when they wake up. Everyone looks forward to the “special red plate set”. A set that only comes out on special occasions, like birthdays or to recognize a family member for something they did exceptionally well. I just replaced ours ( After so many uses, the original took a beating) with a set from dollar tree for a whopping total of 3 bucks ( Plate, goblet ,and bowl). We all go around the table and let the birthday boy/girl know what we love about them, and I tell their birth story.
I don’t know if this is good parenting or torture, I also want to add after midnight the day of their birthday Andy and I wake the birthday kiddo up and jump on their bed, tickle them and obnoxiously sing “Happy Birthday” as loud as we can. Depending on the kid this is received with a laugh or a angry yell ( Either way, we are going to keep doing it !)
After all the unhealthy Turkey day foods, I was ready to cook everyone a yummy balanced breakfast for Friday morning. We had turkey sausage, scrambled cheesy eggs and pineapple with mandarin oranges. I was so happy to cook a big breakfast, now that my hubby is on a “regular” work schedule ( After working rotating swing shift for 9 years) it is a rare occasion we get to have breakfast with him on a weekday. Can I just say my morning coffee always tastes better if I am with him.
I used to be a Pinterest birthday mom, like an EVERY. SINGLE. YEAR. Pinterest birthday mom ( We are talking bounce houses, tea parties and smores bar) . Now that we have 4 kiddos I had to limit that. Pinterest birthday mom makes her appearance at age 1, 5, 10, 16, and 21 ( Or so I hope). On the rest of the years, the kiddos get to pick a simple celebration , like cake with close family, a sleepover or a day out with Mommy and Daddy.
This year Cole picked to go to a local sports complex and do clip n climb with his Dad while Mom watched in
horror awe of how high they were climbing. We then hit up an awesome sushi/hibachi buffet and played in the arcade. It was so fantastic to give our boy some one on one time. His love language is quality time, and these past few years have been hard on him having two younger siblings 16 months apart vying for Mom’s time.
After all the hustle and bustle of Thanksgiving and our away date with our birthday boy. We decided to take Sunday and tackle a home project
we have I have wanted to do FOREVER! My polka dot back splash! For those that know me well, you know I am sort of obsessed with anything polka dot, especially red with white polka dots. So when your wife bats her eyes and says pretty please, pretty pretty pretty please. This happens…………….
I now leave you with the aftermath of our productive four days off. I am folding “clean laundry mountain”. Aren’t you jealous???
Our Menu Plan
My menu plan for this week is pretty simple, we have a tight budget this week due to paying some bills and taking Cole out for some birthday fun, so it’s nothing fancy.
- Roast beef and Noodles
- Breakfast bake
- Hot dogs / sauerkraut and fries ( I am not thrilled about giving the fam hot dogs, but it was a hubby request)
- Pizza/ Christmas movie night ( We will most likely watch Elf )
